Chicken, whole -- 2 each Salt, kosher -- to taste Vegetable Oil -- 1 Tablespoon Onion, yellow -- small dice -- ¼ cup Garlic, Fresh -- minced -- 1 Tablespoon Ginger, Fresh -- minced -- 1 Tablespoon Hoisin Sauce -- 7 ounce Soy Sauce, Light -- 4 ounce Sugar, light brown -- 2 Tablespoon Rice Vinegar -- 2 Tablespoon Apple Cider Vinegar -- 3 ounce Scallion -- washed and thinly sliced -- 3 ounce |

Preheat Oven to 350 degrees Fahrenheit.
To make sauce; sweat onions, garlic and ginger in vegetable oil over low heat. Add the remaining ingredients and whisk to combine well. Bring to simmer. Simmer until you can track a line in the back of a spoon. Set aside.
Season chickens with salt. Place on a rack in a roasting pan. Brush with BBQ sauce. Place in preheated oven and roast approximately 1 hour or until internal temperature reaches 160 degrees. Rotate pans every 20 minutes and apply more glaze in last 20 minutes of cooking.
Remove and let birds rest for 10 minutes. Quarter the birds and place on platter for serving. Brush remaining glaze and garnish with sliced scallions
