ROSIE® Organic Boneless Skinless Chicken Breast Filet
  Fresh Mozzarella Cheese ¼ inch sliced
mixed colored Heirloom Tomatoes cut into ½ inch slices
  Fresh Basil Leaves
2 tsp Italian Herb seasoning
2 tsp olive oil
2 tbsp Balsamic reduction


1 Preheat oven to 400°. Place the chicken breast on a cutting board rough side down. Using a sharp knife cut slits across each breast about ¾ of the way through the breast. 6 to 8 slices per breast depending on the size of the breast. Stuff each slit with one slice of tomato, fresh mozzarella and basil leaf. Placed stuffed breasts on a greased baking sheet. Brush each breast with olive oil. Sprinkle with Italian herb seasoning, salt and pepper. Bake at 400° till internal temperature of the chicken reaches 165°. Let rest for 5 min and plate. For added color and flavor garnish with balsamic reduction if desired.

When slicing the breast to stuff make sure you have a very sharp knife, slice at a 45° angle round side of the breast up. Make sure you do not cut all the way through the breast only ¾ of the way.
